Stuffed Acorn Squash

Ingredients You'll Need
One acorn squash feeds two people.
diced carrots (1/4 cup)
1/4 cup diced broccoli
1/2 lb honey ham chopped finely
5 TBS honey
2 TBS salt
2 TBS garlic powder
1 good size chopped onion
1/2 cup mushrooms diced
Start by steaming carrots, broccoli you can add corn also if you want.
Cook the mushrooms+ onions till browned
Put acorn squash in the microwave with small amount of water in microwavable dish for about 15 minutes. (stupidly hot, so take care).
scoop out acorn squash, (careful to leave the skin intact you will be restuffing this). put into frying pan with carrots, broccoli, onions, mushrooms, ham, salt, GPowder, and the honey. Cook all together with small dab of butter (you can add dill if you like the flavor). Scoop all pan contents into squashes (all will fit, it never looks like it will but it does). Top with cheese, broil for 5 min till melted, serve in deep dish with sourcream
