STUFFED ACORN SQUASH

Ingredients

  • 1 Acorn squash (Cut in half, remove seeds and a bit more)
  • 2 Med Portabella mushroom sm dice, remove black
  • 3 Garlic clove Minced
  • 1/2 Yellow onion, large, small dice
  • 3 tbs Olive oil
  • 4 Strips of turkey bacon or your choice bacon diced
  • 3 tbs Feta cheese or 1 tbs Parm.
  • S&P to taste

Directions

  • Make a bigger dip in squash then seed area
  • Rub outside with olive oil
  • Place rimed bake sheet in oven at 350 degrees
  • Fill 3/4 water with squash cut side down
  • 20 minutes or until very tender
  • Remove from heat
  • Place 3 tablespoons olive oil in Sauté pan. Heat until smoking
  • Add garlic and bacon Cook until tender
  • Salt and pepper to taste
  • Remove from heat and add cheese
  • Fill squash with mixture and bake on dry bake sheet for 10 to 15 minutes at 350°
