Stuffed Baked Potatoes

Ingredients

3 large baking potatoes
Vegetable oil
1/2 cup sliced green onions
1/4 cup (1/2 stick) butter
1/2 cup light cream
1/2 cup sour cream
1 teaspoons salt
1/2 teaspoon white pepper
1 cup shredded Cheddar cheese
1/4 cup (1/2 stick) butter, melted
Paprika


TO PREPARE:


Rub the entire surface of the potatoes with oil and pierce with a fork. Bake at 400 degrees for 1 hour or until tender. Let stand until cool to the touch. Cut the potatoes lengthwise into halves. Scoop the pulp carefully into a mixing bowl, leaving a thin shell.


Saute the green onions in 1/4 cup butter in a skillet until tender. Add the green onions, light cream, sour cream, salt and white pepper to the potato pulp. Beat until well mixed. Fold in the cheese.


Spoon the potato mixture into the shells. Place the shells in a 9x13-inch baking pan. Drizzle with 1/4 cup melted butter and sprinkle with paprika. Bake at 350 degrees for 20 to 30 minutes or until heated through.
