Stuffed Bell Peppers with Barley
1 cup cooked barley *see recipe
1 onion chopped
3 garlic cloves minced
bunch parsley chopped
2 oz. roasted pine-nuts
bunch green onions chopped
4 oz. shredded mozzarella
3 bell peppers cut in half
Pre heat oven to 350 degrees.
Place cooked barley in bowl.
Saute onions and garlic and place in bowl.
Add parsley, pine-nuts, green onions, cheese and mix.
Stuff bell peppers; place in baking dish and cook for 30 minutes.
