Stuffed Bell Peppers with Barley
1 cup cooked barley *see recipe
1 onion chopped
3 garlic cloves minced
bunch parsley chopped
2 oz. roasted pine-nuts
bunch green onions chopped
4 oz. shredded mozzarella
3 bell peppers cut in half
Preheat oven at 350 degrees.
Place cooked barley in bowl.
Saute onions and garlic and add to bowl.
Add parsley, pine-nuts, green onions, mozzarella in bowl and mix.
Stuff bell peppers with mixture and place in baking dish then cook for 30-40 minutes or until bell peppers are tender and filling is hot.
