Stuffed Cremini Mushrooms
2 cups cremini mushrooms with stems removed and diced
4 garlic cloves minced
small bunch of parsley chopped
4 TBSP of olive oil
1 cup fresh parmesan cheese
5 TBSP of whole wheat bread crumbs
salt to taste
First make filling.
In pan saute diced mushroom stems, garlic and parsley with half oil.
Add cheese and bread crumbs to pan and mix.
In pan with medium heat add half oil and cook mushrooms facing down for 3 minutes.
Turn over side up and fill mushrooms with filling, lower the heat and cook for 3 to 5 more minutes.
Add salt to taste.

Mushrooms are cleaned with wet towels.
