Stuffed Green Peppers
2 cup uncooked white rice
28 oz canned stewed tomatoes
4 medium green pepper(s)
3/4 pound uncooked ground turkey breast
Set oven temperature to 350. Cook rice (best with chicken stock instead of water)Cut tops off green peppers, clean out, and slice in half. Dice the tops into small pieces. Add diced peppers, can of stewed tomatoes, and uncooked turkey to cooked rice. Lay out halved peppers in a 9x13 baking dish, and top with the rice mixture. Cover with alumninum foil and bake for 1 hour. Add cheese if desired (points do not include cheese). Add salt and pepper to taste.
