  • 2 lamb steaks
  • ½ cup spinach
  • 2 cloves garlic
  • 1 small onion
  • ½ cup bread crumbs
  • 1 egg
  • ½ cup goat cheese
  • 2 lemons
  • ¼ cup honey
  • Salt and pepper
  • Rosemary
  • 1 tab. Olive oil


  • Heat the olive oil. Chop half the onion in large chunks, mince th other half. Cook both in oil. Add the garlic, and the spinach. Cook just until the spinach is wilted. Remove from heat. Combine the bread crumbs and the egg. Stir in the spinach mixture, reserve the big chunks of onion. Set them in a glass baking dish. Flattened the steaks, so they are as large as possible. Rub all over ith salt and pepper and rosemary. Put a dab of stuffing and a dab of goat cheese in the middle of the steak. Roll it up and tie it with string. Put it in the pan with the onions. Squirt lemon juice on top and smother in honey. Bake at 350* 20 minutes, then turn, baste with juices, cook another 15 minutes.
