- 1 egg white, unbeaten
- 1/2 lb shrimp
- 14 dried mushrooms
- 1 tsp ginger juice
- 1 tsp wine
- 1 tsp cornstarch
- 1 tsp salt
- Soy sauce
- Chop shrimp fine.
- Soak mushrooms in lukewarm water 20 to 30 minutes.
- Mix rest of ingredients and mound onto mushrooms.
- Steam for 10 minutes.
- Serve hot or cold with soy sauce.
