Stuffed Pepper Skillet with Cheesy Polenta
1 lb. Ground beef
2 large bell peppers, chopped
1 small onion, chopped
1/2 small garlic head, minced
1 small can tomato paste
salt and pepper to taste
1 C. dry polenta/yellow grits, uncooked
3 C. chicken stock/broth
1 C. white cheddar cheese, shredded
Stuffed Pepper Skillet:
Brown ground beef over medium high heat for 5 mins, drain if desired. Add salt, pepper, and veggies to beef in skillet, and cook over medium heat 'til onions are translucent. Stir in tomato paste and 3/4 C. water, reduce heat, and simmer 10 mins.
Bring stock/broth to a boil.
Stir in polenta, boiling for 5 mins, stirring occasionally.
Remove polenta from heat, stir in cheese.
Cover for 5 mins.
Serve Stuffed Pepper Skillet over polenta and enjoy!
