- 4 Large tomatoes
- 1 tbsp uncooked rice
- mint (optional)
- olive oil
- Take 4 large, firm, ripe tomatoes and slice the tops off. Set the tops aside. Scoop out the insides into a bowl, taking out the firmer parts and leaving just the pulp. Add rice the rest of the ingredients, mix together and place inside each tomato. Put the tops back on. Place on a tray or pan and dribble oil over, and sprinkle some more salt and any desired spices.
- Place in ovan at 300 degrees for 1 hour, until done. After 15 minutes, baste tomatoes with the juice in the pan. Voila!
