Stuffed Yellow Squash
3 large yellow squash
1/4 pound bulk sausage
1/2 cup green pepper -- chopped
1/4 cup onion -- chopped
1 medium tomato -- chopped
1/2 cup grated Parmesan cheese
1 cup mozzarella cheese -- shredded
Cut squash in half, lengthwise. Scoop out pulp and seeds and discard,
leaving 1/4-inch thick shell. Set aside.
In 2-quart casserole, combine sausage, onion and green pepper. Cover. Microwave at Medium Hight 3 to 5 minutes, until sausage is brown. Stir every 2 minutes. Drain. Add tomato and Parmesan cheese. Stir until well blended. Spoon mixture into squash shells; place squash in 3-quart oblong glass baking dish. Cover with wax paper. Microwave on High 15 to 18 minutes; rotate dish 1/2 turn after 8 minutes. Sprinkle with mozzarella cheese. Microwave on High 2 to 3 minutes until cheese is melted.
