Stuffed Zucchini Boats
1 lb. Bulk sausage
1/3 lb. Ground chuck
1 medium onion (chopped)
1 clove garlic (minced)
½ C grated Parmesan cheese
½ C bread crumbs
½ t salt
¼ t garlic salt and pepper
Cook whole, washed zucchini in boiling water for 7-10 min, until barely tender.
Cut in ½ lengthwise and scoop out squash and seeds leaving a ½” shell all around.
Brown meats, onion, and garlic until tender.
Stir in mashed zucchini and remaining ingredients except cheese, (save 2 T cheese for top.)
Cover inside of the shell with a layer of mozzarella cheese.
Spread mixture over cheese, sprinkle with grated cheese and paprika.
Bake at 350-degrees for 25-30 min.
