2-3 medium zucchini
1 lb. bulk pork sausage
1/3 lb. ground chuck
1 medium onion (chopped)
1 clove garlic, minced
½ cup grated parmesan cheese (save 2 Tbs. for top)
½ cup bread crumbs
½ teaspoon salt
¼ teaspoon garlic salt and pepper
Cook whole, washed zucchini in boiling water 7-10 minutes, until barely tender.
Cut in ½ length wise and scoop out squash and seeds, leaving a ½” shell all around.
Brown meats, onion, and garlic until tender.
Stir in mashed zucchini and remaining ingredients except cheese.
Cover inside of shell with a layer of mozzarella cheese.
Spread mixture over cheese.
Sprinkle with parmesan cheese.
