Suburban 50s Mac & Cheese

Ingredients

8 oz elbow macaroni
1 can cream of mushroom soup (I use low sodium)
1 soup can of milk
1 tbsp mayo (I substitute plain yogurt)
8 oz extra sharp cheddar


Pre-heat oven to 350. Cook macaroni and drain. Shred cheese into a large bowl. Add cooked macaroni and remaining ingredients. Stir. Pour mixture into a casserole dish and bake for 30 minutes.


Variations: Dice and saute a small yellow onion, then add it to the mixture before stirring.


If you are feeling extravagant, use aged sharp cheddar.


Try adding another cheese to the mix. I especially liked adding some grated locatelli cheese or asiago. It added some "kick" to the flavor.


Speaking of kick, I always add hot sauce to my mac and cheese. Put some on the table when serving so guests can make that choice.

This recipe was recreated by memory. A friend got this recipe from his friend's mom. It reminds me of something that you'd see in an old 50s magazine, telling suburban housewives how to make a simple hearty meal.
