Why I Love This Recipe

Cookie Exchange 1995 ~ I selected these cookies but I thought they were unique and pretty and we had extra hard candies.


Ingredients You'll Need

6 Tablespoons unsalted butter, at room temperature
3/4 cup sugar
1 large egg
1 Tablespoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup shortening
1 Tablespoon milk

7 ounces assorted fruit-flavored hard candies


Directions

Sift together flour, baking powder and salt.


Using an electric mixer, beat the butter and shortening for 30 seconds. Add sugar on medium-high speed until fluffy, 2 to 3 minutes; add egg, milk and vanilla. Reduce speed to low and add the flour mixture, mixing just until combined (do not over mix).


Divide the dough in half, shape into two disks, wrap in plastic wrap, and refrigerate until firm, at least 3 hours.


On floured surface, roll to 1/8" thickness. Cut into desired shapes, then cut desired shape into center of cookie. Place on ungreased cookie sheet and place candy in cut-out of each cookie. (Candy may need to be broken into pieces depending on size of cut-out, or to combine colors).


Bake at 375 degree oven for 5-8 minutes or until just golden at the edges. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
