Sue's Mixed Nut Brittle

Serves 1 pound | Prep Time | Cook Time


1 cup sugar
1/2 cup firmly packed light brown sugar
1/4 cup light corn syrup
1/4 cup water
1 Tablespoon butter
1/2 teaspoon baking soda
1 1/2 cups mixed cocktail nuts (any combination)

In a large heavy saucepan, combine the sugars, corn syrup and water over low heat. Cook, stirring constantly, until the sugar has dissolved completely.

Increase heat to medium. Insert candy thermometer so it does not touch the bottom of the pan; cook without stirring until it reads 300°

Working quickly, remove the pan from the heat and stir in butter, baking soda and nuts.

Pour mixture immediately onto a large, lightly oiled baking sheet and spread with an oiled spatula, pulling and stretching mixture in a thin, even layer. Place baking sheet on a wire rack; let cool completely.

When candy has cooled, lift from the baking sheet with a spatula and crack into pieces. Dip ends in melted chocolate and sprinkles or leave plan.
