Sugared Rhubarb Muffins

Ingredients

1 1/2 cups brown sugar
2/3 cup oil
1 egg
1 cup buttermilk
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 cups rhubarb
1 cup nuts
1/2 cup sugar
1 tablespoon margarine


Combine brown sugar, oil, egg, buttermilk, salt, baking soda, vanilla, flour, rhubarb (cut-up), and 1/2 cup of the nuts.



Put into muffin cups.



Combine 1/2 cut nuts, sugar, and butter. Sprinkle over top of muffins.



Bake at 375 degrees for 20 minutes.

Love this recipe from Grandma Hattie. I think they are even better the next day once the rhubarb moistens the muffins even more.
