Summer Sausage Spinach Bites

Ingredients

1 egg, beaten
2 cloves garlic, finely minced
1/4 cup fresh grated parmasan cheese
1 can spinach, drained and squeezed dry
6 - summer sausage (2 1/4 diameter), sliced thin
1 pie crust dough, cut to fit in muffin tins
1/4 cup parmesan cheese


Preheat oven to 350 degrees.


Line in muffin tins with dough.


Mix spinach, egg, garlic, and 1/4 cup cheese. Place 1 Tbsp in each muffin tin.


Top with 1 thin slice of summer sausage and bake for 50-60 minutes or until crust is browned. Remove from oven and sprinkle alittle cheese on top. Return it to oven til cheese is melted. Sometimes I use grated cheddar on the top.
