1 cup(250ml) thickened cream
1 cup(250ml) coconut cream (at least 19g fat content), well chilled
1 1/2 cups(240g) pure icing sugar, sifted
1/4 cup(240g) pure icing sugar, sifted
250 gcoconut yoghurt
1/2 cupmoist coconut flake
Beat cream, coconut cream and icing sugar in a medium bowl with an electric mixer until soft peaks form. Fold in lime juice, yoghurt and coconut until just combined.
Spread mixture into a loaf pan, cover and freeze 6 hours or overnight.
