SUMMERTIME POTATOE SALAD

Ingredients

  • 10 Idaho Potatoes(diced and peeled in small chunks)
  • 3 celery stalks(cleaned and chopped small)
  • 1 green pepper(chopped small)
  • 1 small onion(in food processor)
  • 1TBLS coarse salt,
  • 1 1/2c mayo (you can add more or less to your preference)

Directions

  • 1 1/2c mayo (you can add more or less to your preference)
  • Peel potatoes and dice in small chunks, cook until tender,set aside until cool, combine the rest of the ingredients and add potatoes mix well. Keep in the refrigerator overnight.

Notes

I got this recipe from my very dear neighbor and the first time I tasted it I told her "I want that recipe" have been making it ever since and have gotten alot of rave reviews from it.
