SUN DRIED TOMATO CREAM CHEESE MOUSSE

Ingredients

  • 1/2 c sun dried tomatoes
  • 2T pesto (I use the kind in the tube)
  • 2 8 oz blocks of cream cheese - softened
  • 6 slices provolone cheese

Directions

  • mix 1 block cream cheese with sun dried tomatoes - I use my old hand stick blender for this (hint, hint :)
  • Layer into loaf pan as follows -
  • provolone cheese (3 slices)
  • sun dried tomato cream cheese mix
  • provolone cheese (3 slices)
  • remaining block of cream cheese
  • cover, and let set in fridge overnight
  • when ready to serve, turn over and unmold
  • Garnish with pesto over the top of the cheese
  • Serve with your choice of crackers

Notes

believe it or not, this actually tastes like salmon mousse! :) It is great for pot lucks and get togethers, and looks like it was way harder to make than it actually is!
