Sunday Chops and Stuffing

Ingredients

2 cups water
2 celery ribs, chopped
7 tablespoons butter, divided
1/4 cup dried minced onion
6 cups seasoned stuffing croutons
1 tablespoon vegetable oil
6 3/4 inch bone in pork loin chops
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium tart apples, sliced
1/4 cup brown sugar, packed
1/8 teaspoon pumpkin pie spice


In a saucepan, combine the water, celery, 6 tablespoons butter and onion. Bring to a boil. Remove from the heat; stir in croutons. Sppon into a greased 13 x 9 x 2" baking dish; set aside.



In a large skillet, brown pork chops on both sides in oil. Arrange over the stuffing. Sprinkle with salt and pepper. Combine the apples, brown sugar and pumpkin pie spice; spoon over pork chops. Dot with the remaining butter. Bake, uncovered, at 350 degrees for 30-35 minutes or until meat thermometer reads 160 degrees and meat juices run clear.
