Sundried Tomato Chicken
1 cup of chicken broth
4 chicken breasts
1/2 cup of white wine
3 garlic cloves diced
1 teaspoon of crushed red peppers
2 tablespoons of sun dried tomatoes ( I used packed in oil)
1 Roma tomato seeded and diced ( 1 large one or 2 medium ones- dice fine)
Brown the chicken on both sides ( I seasoned with salt and pepper) set aside. In a pan brown garlic with chicken broth and wine, simmer until garlic softens. Add both tomatoes and squeeze the lemon juice in the sauce. Simmer until slightly thickened. Then add chicken back to tomato broth and simmer until ready to serve.
I served this with parmesean orzo with some of the sauce served over the orzo. Great light dish!
