Sunny's Carrot Salad
½ cup of raisins
1 pound (5-6 medium) peeled carrots
½ cup of mayo OR ½ c of yogurt (OR a combination of them both)
2 T of lemon or orange juice
Salt & pepper to taste
Pour boiling water on raisins.
Coarsely grate peeled carrots.
In a small bowl mix together mayo or yogurt or a combination of the two.
Drain the raisins and combine with the mayo mixture.
Add lemon or orange juice to thin out the dressing.
Combine with the dressing.
Salt & pepper to taste.
