Why I Love This Recipe

This recipe came at the spur of the moment as I was stood over the hob on a typically midweek evening with a handful of ingredients and no inspiration of what to do with them. I love fajitas but I eat too many of them and so I basically swapped the tortillas for healthy old brown rice and turned my fajitas into a streamlined healthy rice dish!


Ingredients You'll Need

1 x chicken breast
1 x red onion
1 x yellow / red / green pepper
1/2 cup of brown rice
Mexican seasoning mix
Sweetcorn
Black beans


Directions

To prep:


Dice the chicken into strips


Slice up the onions and peppers - again long ways into strips


Cook the rice - bring water to boil and simmer for around 15-20 minutes


Once the rice is 10 minutes or so into cooking, fry the chicken in a little olive oil


Once it has begun to brown slightly, add the onion and soon after the peppers


Once it has all begun to fry through, add the seasoning mix, sweetcorn and beans and stir through thoroughly


Drain the rice, and add this too the pan, stir through thoroughly and serve
