Super Soft Peanut Butter Cookies

INGREDIENTS

  • 1/2 cup margarine, softened
  • 3/4 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour

DIRECTIONS

Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.


Add flour, baking soda and salt with mixer.


Chill dough 15 minutes in the refrigerator. Roll into balls by hand.


Place on sprayed cookie sheet.


Using a fork, press down the balls and create a criss cross pattern.


Bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes).


Don't overcook.


We store them in a plastic storage containers, and they stay soft!


NOTE: I changed the pb amount from 1/2 cup to 3/4 cup per suggestions in the review comments.

Those look great .... I have been searching for a PB cookie recipe that bakes cookies similar to the ones you get at Subway ... random I know but their PB cookies are sooo chewy and peanutbuttery .... have you had them? Are they at all like the ones you made? THANKS!

Yes, I've had Subway PB cookies. I actually worked there all through high school, lol. And yes, VERY similiar. They are really soft and chewy and even more so if you put them in a plastic container. Even two days later they were soft, if not even more soft than the first day. :)

I've been searching for the perfect peanut butter cookie for a long time now and chose yours because they claimed to be super soft - I was NOT let down! These are awesome cookies and definitely will be my standard pb cookie recipe from now on, thanks so much for sharing your recipe!

Perfect, just the way you said they would be! I made 2 dozen....nice size...baked full 10-12 minutes.

I also found this recipe on allrecipes.com and changed the amount of peanut butter too, although I did add a cup and a half of peanut butter chips and it made them amazing! Super soft and great peanut butter taste, my mother in law loved them!

like the recipe but was to dry...added more butter...and put yellow sugar on top...now is perfect...
