1/2 small red onion, diced fine
3 cloves garlic, minced
1 Tbsp. olive oil
1/2 pound ground beef
1 Tbsp. poultry seasoning
1/4 cup roasted red pepper, in jar, diced fine
4 Tbsp. parmesan cheese, grated
Salt & pepper to taste
Sauté onion and garlic in olive oil for 5 minutes, cool, and mix with the rest of the ingredients in a mixing bowl.
Roll into tablespoon-sized balls and bake on a baking sheet at 375°F for 15-20 minutes.
