Swanson Flame-Free Cherries Jubilee
cup of Swanson 100% Pure Montmorency Tart Cherry Juice
1 tablespoon of cornstarch
2 tablespoons of brown sugar
1 cup of pitted fresh cherries or canned, drained cherries
2 tablespoons of brandy (optional)
1 pint of low-fat vanilla ice cream
In a small saucepan, heat cherry juice over high heat. Whisk in cornstarch and brown sugar, and heat to boiling point. Add cherries and coat them with the mixture.
Remove from heat momentarily to add brandy, and place back over heat. Simmer for ten minutes and remove from heat. Spoon hot fruit mix over low-fat vanilla ice cream. Serves 4.
