Swedish Lemon Bars

Ingredients

1 cup butter, softened
2 cups flour
1 cup powdered sugar
Mix well. Pack evenly into 9x13" pan and
bake 15 minutes at 350 degrees.
4 tablespoons lemon juice
grated lemon rind
4 eggs, beaten
2 cups sugar
Mix and set aside while crust is baking
SIFT TOGETHER
4 tablespoons flour
1 teaspoon baking powder


Add to egg mixture. Pour over hot crust and bake again 20-25 minutes. DO NOT OVERBAKE!! Immediately after removing from oven sprinkle with powdered sugar while still hot. Cool overnight for easier cutting.
