SWEDISH TEA CAKES

Ingredients

  • 1/2 c powdered sugar
  • 1 c butter
  • 2 tsp vanilla
  • 2 c all purpose flour
  • 1 c finely ground almonds (or pecans)
  • 1/4 tsp salt

Directions

  • These are light and quite sweet. Make them mouth-size bites as they can get crumbly.
  • 1/2 c powdered sugar
  • 1 c butter

  • 1/4 tsp salt
  • Oven at 325
  • 1. Cream butter & sugar with vanilla until light & fluffy
  • 2. Add flour, almonds and salt. Mix until dough holds together.
  • 3. Shape into 1” balls & place on cookie sheet
  • 4. Bake 15-20 min
  • 5. Cool slightly, about 5 min. Roll in extra powdered sugar
  • 6. Cool completely. Roll in more powdered sugar.
  • Yields about 5 dozen balls
  • Variations I've done:
  • - Substitute almond extract for vanilla
  • - Use a mix of cocoa and powdered sugar on outside when using pecans inside
  • - Use rum extract when using pecans

Notes
