INGREDIENTS

  • 5-8 boneless pork chops, 1/2" thick
  • 2-3 med red or yukon gold potatoes, sliced 1/4" (skin on is fine)
  • 3-4 med granny smith apples, peeled, cored and rough chopped
  • 1 lg onion, rough chopped
  • zest of one orange
  • 4 T juice of one orange
  • Olive oil spray
  • Butter
  • 2 T brown sugar
  • 1/2 can chicken or turkey broth
  • 2-3 T flour
  • salt and pepper
  • 3 T fresh chopped parsley

DIRECTIONS

Pat chops dry and sprinkle with salt and pepper.


Brown chops on both sides in a little olive oil.


Removed chops to casserole dish sprayed with olive oil spray.


Saute potatoes in drippings in same pan, adding a little butter and browning on both sides - should be about 75% cooked through.


Arrange potatoes around chops in casserole.


Dust the apple and onion pieces with the flour and add to the same pan, with a little more butter, the orange zest and juice.


Saute for about 3", then add the brown sugar and continue until a bit golden and gooey.


Add enough chicken/turkey broth to thin and create a gravy-like sauce.


Season with salt and pepper to taste.


Pour sauce over chops and bake at 325 for about 30" until chops and potatoes are cooked through.


Garnish with parsley.

This recipe was the result of needing to use up some apples and potatoes before they went bad. We were pleasantly surprised by the result. One of my nephews is crazy for stuffed pork chops, so we sometimes cover half of this dish with a traditional cubed stuffing with celery, onion, etc. to satisfy him. This is the only pork he'll eat without apple sauce. :)
