SWEET & RUSTIC PORK CHOPS
Sweet & Rustic Pork Chops
INGREDIENTS
- 5-8 boneless pork chops, 1/2" thick
- 2-3 med red or yukon gold potatoes, sliced 1/4" (skin on is fine)
- 3-4 med granny smith apples, peeled, cored and rough chopped
- 1 lg onion, rough chopped
- zest of one orange
- 4 T juice of one orange
- Olive oil spray
- Butter
- 2 T brown sugar
- 1/2 can chicken or turkey broth
- 2-3 T flour
- salt and pepper
- 3 T fresh chopped parsley
DIRECTIONS
Pat chops dry and sprinkle with salt and pepper.
Brown chops on both sides in a little olive oil.
Removed chops to casserole dish sprayed with olive oil spray.
Saute potatoes in drippings in same pan, adding a little butter and browning on both sides - should be about 75% cooked through.
Arrange potatoes around chops in casserole.
Dust the apple and onion pieces with the flour and add to the same pan, with a little more butter, the orange zest and juice.
Saute for about 3", then add the brown sugar and continue until a bit golden and gooey.
Add enough chicken/turkey broth to thin and create a gravy-like sauce.
Season with salt and pepper to taste.
Pour sauce over chops and bake at 325 for about 30" until chops and potatoes are cooked through.
Garnish with parsley.
