6 pounds pork baby back ribs
3/4 cups granulated sugar
1/2 cup brown sugar
1/8 cup salt
2 tablespoons ground black pepper
3 tablespoons smoked spanish paprika
1/2 teaspoon cayenne pepper, or to taste
2 tablespoons garlic powder
2 tablespoons onion powder

Clean the ribs, and trim away any excess fat.

In a medium bowl, stir together the sugars, salt, ground black pepper, paprika, cayenne pepper, garlic and onion powder.

Rub ribs heavy with spice mix.

Place the ribs in two large roasting pans.

Cover, and refrigerate overnight or for at least 8 hours.

Preheat oven to 250 degrees.

Bake uncovered for 3 to 4 hours, or until the ribs are tender and nearly fall apart.

Pairs Well With

The recipe is sweet and spicy. I perfer my ribs dry, but if you want wet ribs, after cooking time add your favorite BBQ sauce and return to oven for appx 15 minutes.
