SWEET CORNBREAD MUFFINS

Ingredients

  • 1 Cup yellow cornmeal
  • 1/2 Cup all-purpose flour
  • 1/2 Cup whole wheat flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 Cup milk
  • 2 large eggs
  • 1/4 Cup butter or margarine, melted (we forgot to melt it and it worked fine)
  • 1/4 Cup Honey

Directions

  • 1. Preheat oven to 375F (190C)
  • 2. Line muffin tin with paper liners
  • 3. In a large bowl, mix the dry ingredients (cornmeal, flours, baking powder, and salt)
  • 4. In a medium bowl, whisk together the wet ingredients (milk, eggs, butter and honey)
  • 5. Add the wet ingredients to the dry ingredients and stir until just mixed
  • 6. Evenly divide the mixture into the lined muffin tin, about 3/4 full
  • 7. Bake for 15 mins or until golden
