BackstoryI’m spending my first Halloween in NYC, and it’s bound to be a crazy week. When I left the gym on Sunday, I was walking along Broadway and suddenly a motorcycle gang of about 200 guys came racing down the street with scary Halloween masks, revving their engines and weaving around all the other cars on the road. A few of them were even growling. I really wish I would have remembered to take my camera out, but I was too scared! Haha, better toughen up Laurel. Anyways, on to the goodies.
- Roasted Squash with Black Sesame Seeds
- 1 large butternut squash
- 1 tsp. black sesame seeds
- 1 tbsp. honey
- 1 tbsp. olive oil
- Cut up the butternut squash into bite-sized pieces and spread out on a sheet pan. Drizzle olive oil on top and season with a sprinkle of salt. Roast in the oven at 400 degrees for 30 minutes. Stir the squash a few times during cooking. Take the squash out of the oven and reduce the oven heat to 325 degrees. Sprinkle black sesame seeds on top and put back in the oven for 10 minutes. Take the squash out again and drizzle honey on top. Serve immediately.
- Tip: To save time, you can use frozen butternut squash. I did! The squash will be significantly softer and it may turn into a mash, but it tastes just as good!
