Sweet Onion & Bread Soup
8 oz sourdough bread (or any other dense, dark bread)
3 large sweet onions
3 large garlic cloves (or 5 medium ones)
2 1/2 cups chicken broth
1 tsp dried thyme
1 cup milk
3 oz butter
Cube the bread. Peel and slice the onions and grate the garlic. Heat 1/2 of the butter in a skillet. Toss in bread and cook until crispy. Add 1 cup of milk and turn off heat.
Heat remaining butter and cook the onions, garlic, & thyme for 20-30 min. Add chicken broth and bread cubes and simmer on low for 10 minutes.
Season with salt and pepper. Serve with sour cream and grilled cheese.

This is one of the only recipes that I haven't tried, but I thought it was right up your alley, Mom. I will give it a whirl soon and let you know if it's gross. It would probably be delicious with a pretzel grilled cheese.
