Why I Love This Recipe
A quick dessert idea or side dish. Use yellow plantains with plenty of black patches.
Ingredients You'll Need
2 plantains (blackening)
1 Tablespoon olive oil
1 Tablespoon butter
1/2 teaspoon cinnamon
1 teaspoon brown sugar
Gently open the plantains by slicing one side of the skin and then peeling the skin off with your fingers.
Slice the plantains on an angle, cutting them into 1 inch thick oval pieces.
Find a pan with a matching lid and heat oil and butter in the pan on medium heat.
Add the plantains and let sizzle, flipping periodically, for about 2 minutes or until each side is golden brown.
Sprinkle the plantains with cinnamon and brown sugar.
Cover the pan with the lid and reduce the heat to low. Allow the plantains to caramelize for 10 minutes, then serve.
