Sweet Potato Bites (Low Carb- Gluten Free)

Ingredients You'll Need
1 lb Sweet potatoes
4 tbsp Olive Oil ( more if needed)
Salt and Pepper
3/4 cup of Shredded Mild Cheddar
6 slices cooked Bacon (chopped)
1/2 cup Sour Cream
2 tbsp chives(chopped)
1.Pre Heat oven to 400°
2.In a large bowl mix together sweet potatoes, olive oil, salt and pepper to taste. Mix until coated well.
3.Place on rimmed baking pan and bake for 25 minutes.
4.Top each slice with Cheese , Bacon, Sour Cream, and Chives.
