Sweet Potato Casserole

Ingredients

5 large sweet potatoes
6 tablespoons butter
1/2 to 3/4 cup canned milk
2 eggs
1 1/2 cups brown sugar
2 cups marshmallows, cut up
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup chopped pecans
1/2 cup bourbon
marshmallows (for topping)


Gently boil sweet potatoes until tender. Peel the hot potatoes and mash. Melt the butter and, along with the milk and the eggs, add to the potatoes. Beat until fluffy. Stir in the other ingredients, reserving the large marshmallows. Pour into a 2-quart casserole. Top with marshmallows and bake at 350° until marshmallows brown.
