Sweet Potato Casserole

A healthy and easy to make sweet potato dish perfect for the holiday season that is dairy free, gluten free & sugar free.
Ingredients You'll Need
6 large sweet potatoes- peeled & chopped
1 cup walnuts
1/2 cup full fat coconut milk
1 tablespoon cocoa powder
1 tablespoon vanilla extract
3 drops Cinnamon Bark Vitality Essential Oil
2 tablespoons olive oil
Directions
Preheat oven to 350F
Boil potatoes for 20-25 minutes- until soft
Drain water out & return sweet potatoes to pot
Add 1 tablespoon of olive oil, the coconut milk & vanilla extract, and sprinkle in some salt.
With a hand mixer mash everything together until it's smooth
Transfer all into a casserole
In a small bowl mix the chopped walnuts with 1 tablespoon of olive oil, cacao powder, and cinnamon bark oil.
Sprinkle on top of the sweet potatoes
Cook for 20 minutes
