Sweet Potato Cheesecake
1 cup mashed Sweet Potato
3/4 cup brown sugar
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
2 8oz packages Cream Cheese (Softened)
3 large eggs
1 1/2 cups sugar
2 9 inch graham cracker crusts
Blend the mashed sweet potato with next 4 ingredients until smooth and combined with hand mixer.
Blend softened cream cheese, sugar and eggs until smooth.
Reserve about 1/2 cup of the cream cheese mixture and set aside to marble the cheesecake.
Blend the cream cheese and sweet potato mixture together.
Preheat oven to 350 degrees.
Pour blended mixture into graham cracker crust. With a teaspoon drizzle the reserved cream cheese mixture and take a butter knife and swirl the top of the cheesecake to create a marbled effect.
Bake until the middle is set.
Let cool and refrigerate.
