Sweet Potato Mocha Nut Bread
1/2 c. soft butter
1 1/2 c. sugar
1/2 cup brown sugar
3 c. flour
1/2 pecan meal
2 c. cold mashed sweet potatoes
2 tsp. baking soda
2/3 c. cold, strong black coffee
1/2 c. shortening
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. nutmeg
Cream shortening and sugar until light.
Add eggs, one at a time, mixing well after each addition.
Blend in sweet potatoes.
Sift together dry ingredients.
Stir into creamed mixture alternately with cold coffee.
Pour batter into 2 greased 9 x 5 loaf pans.
Bake at 375 degrees for 1 hour or until they test done in the center.
Cool 10 minutes.
Remove from pans and cool completely.
