Sweet Potato Souffle

Serves 9 | Prep Time 30 | Cook Time 35-45

Ingredients

Filling:
4 c mashed sweet potatoes (1 inch cubes, steamed/boiled for 20 min or till fork tender)
1 c sugar (I go a bit light on the sugar, I'd say to taste)
2 eggs
1/2 c milk
1/2 t salt
1/3 c butter melted (I go a bit light on this too- have even left it out, no big deal)
1 t vanilla

Topping:
1 c brown sugar
1/2 c flour
1/3 c butter (NOT melted)
1 c pecans, roughly chopped


For the filing:


Mix all ingredients well and pour in pan sprayed with nonstick spray


For the topping:


Stir all dry ingredients together with fork


Cut in butter until the mixture is well incorporated


Crumble topping evenly over filling mixture


Bake uncovered at 350 degrees for 35-45 minutes
