SWEET POTATO SOUFFLE

 

  • Cooking Time: 35-45
  • Servings: 9
  • Preparation Time: 30

Ingredients

  • Filling:
  • 4 c mashed sweet potatoes (1 inch cubes, steamed/boiled for 20 min or till fork tender)
  • 1 c sugar (I go a bit light on the sugar, I'd say to taste)
  • 2 eggs
  • 1/2 c milk
  • 1/2 t salt
  • 1/3 c butter melted (I go a bit light on this too- have even left it out, no big deal)
  • 1 t vanilla
  • Topping:
  • 1 c brown sugar
  • 1/2 c flour
  • 1/3 c butter (NOT melted)
  • 1 c pecans, roughly chopped

Directions

  • For the filing:
  • Mix all ingredients well and pour in pan sprayed with nonstick spray
  • For the topping:
  • Stir all dry ingredients together with fork
  • Cut in butter until the mixture is well incorporated
  • Crumble topping evenly over filling mixture
  • Bake uncovered at 350 degrees for 35-45 minutes
