Sweet Potato and Black Bean Vegan Fajitas
1 sweet potato, peeled and diced
1 red onion, sliced
2 cloves garlic, minced
1 red and yellow pepper, sliced
2 t cumin
1 t chili powder
1 t oregano
1/2 t salt
1 can of no added salt black beans
1/4 c water
1 bag of corn tortillas
1 bunch cilantro, leaves chopped
Fill a sauce pan with water and begin to boil.
Add sweet potatoes and cook until al dente.
Meanwhile, place skillet over high heat and add onions and garlic.
Once they become fragrant add in some water to help the cooking process (you can also use oil, but we don't like to add fat to our food)
Add in peppers and seasonings and continue to cook for 5 minutes.
Open, rinse, and drain black beans and add to skillet.
Toss in sweet potatoes, sprinkle cilantro and juice the lime over the top.
Take off heat and serve on tortillas. It is really nice with some spanish rice, guacamole, and sliced purple cabbage on top.
