Sweet and Sour Meatballs

Why I Love This Recipe


Ingredients You'll Need

1 pound lean ground beef
2 Tbsp fine, dry breadcrumbs
1 Tbsp skim milk
1/2 tsp pepper
1/4 tsp salt
1/8 tsp dried whole thyme
1/8 tsp ground cinnamon
Dash of ground red pepper
1 clove garlic, minced
Vegetable cooking spray
1/2 cup chopped onion
1 (10.75 oz) can tomato puree
1/2 cup unsweetened pineapple juice
2 Tbsp red wine vinegar
2 Tbsp lemon juice
1 tsp Worcestershire sauce


Directions

Combine first 9 ingredients; mix well. Shape into 48 meatballs, using 1 ½ tsp mixture for each meatball. Arrange on rack of a broiler pan coated with cooking spray. Bake at 400 degrees for 10 minutes or until browned. Set aside.


Coat a Dutch oven with cooking spray; place over medium heat until thoroughly heated. Add onion and sauté until tender. Add tomato puree, pineapple juice, vinegar, lemon juice and Worcestershire sauce. Add meatballs; cover and simmer over low heat for 20 minutes. Serve hot.
