Sweet and Sour Pork
1 can (20 oz.) pineapple chunks
1/2 cup water
3 Tblsp. soy sauce
1 1/2 Tblsp. cornstarch
1 Tblsp. vinegar
1/4 tsp. hot pepper flakes
1 lb. boneless pork
3 Tblsp. olive oil
2 large cloves garlic, thinly sliced
1 tsp. ground ginger
1 large onion, sliced
1 pepper julienned
2 cups snow peas, strings removed
Drain pineapple, reserving 4 Tblsp. juice. Mix reserved juice, water, soy sauce, cornstarch, vinegar, and pepper flakes; set aside.
Prepare the pepper, garlic, onion, and snow peas. Set aside.
Cut pork in strips. In large skillet or Dutch oven, brown pork in hot oil. Remove the meat and set aside.
Add the garlic, onions, and pepper to the skillet and sauté for a minute or so.
Stir up the sauce and add to the vegetables; bring to a boil. Add the meat back in along with the pineapple chunks and snow peas. Heat through.
Serve over rice if desired.
