Sweetened Condensed Soy Milk

Ingredients

3 cups plain soy milk
1/2 cup sugar
1/2 tsp vanilla extract
pinch salt


Put the soy milk and sugar in a sauce pan over medium-low heat. Stir constantly until the volume is reduced to 1 cup. Take off the heat and add your vanilla and salt. Store in the fridge. This is only good for 7 days, then should be thrown away

I got this recipe from the website of silk soy milk. My daughter and grandson are both lactose int. and I was looking for a way to use my regular recipes without the milk products

I have been allergic to milk for years, but I didnt want to give up my old family recipes that need condensed milk. And I'll admit it, I'm a bit lazy. If it's already made for mr I'll use it rather than make it. My secret is in the baby food isle there is condensed soy milk. It works like a charm. I use it in pumpkin pie, and even in my fudge recipe. You would never know it's soy. Though I'd share my secret! Happy thanksgiving.

Oh gosh. Thank you so much for posting this! I was just on here last night making my usual cookbook add rounds and was considering starting on a half-and-half vegan vegetarian again and this would make it sooo much better!!!
