- Servings: 6 servings
- 5 boiled potatoes, peeled and cubed
- 2 Tb. chopped green onions with tops
- 2 Tb. salad oil
- 2 Tb. butter
- 2 Tb. grated Swiss cheese
- 1 tsp. salt
- 1/4 tsp. pepper
Cook potatoes and onions in mixture of salad oil and melted butter in skillet 'til potatoes are lightly browned. Add cheese, salt and pepper and toss. Serve immediately, or place in casserole and keep warm in oven 'til ready to serve.
I have to laugh at what the cookbook says about this recipe!! And I do believe it is the gospel truth!! I've not served this to a man yet, that didn't love it. The Farm Journal book says, "All the men say these are great." :O)
