- Shredded chicken meat
- frozen peas and carrots
- small cubed potatos
- chopped onion
- salt and pepper to taste
- Place shredded chicken meat in a bowl. Boil frozen peas and carrots with cuts of fresh potatos that are almost the size of the carrots until JUST done. Drain and add to the meat along with the chopped onion.
- Season well with salt and lots of black pepper then use a generous amount of mayonaise to bring it all together.
NotesSylvia Navarro was a girl I worked with who I liked very much. Her mother, Sylvia, used to make this most delicious chicken salad. Very different than I was used to. We would either serve it on tostados or slice croissants.
