TOMATO AND BASIL SALAD
3 large tomatoes sliced
8 ounces mozzarella, sliced
1/4 cup olive oil
1/4 tsp. salt
1/8 tsp. pepper
1/4 cup minced fresh basil
On a large serving platter, alternate tomatoes and mozzarella slices in a circle.
In a jar with a tight-fitting lid, combine the oil, salt and pepper; shake well.
Drizzle over tomatoes and mozzarella. Sprinkle with basil.
Pairs Well With
Went to a banquet at an Italian hall and was served a salad basically the same as this. The only difference was the tomatoes were slightly warmed. I haven't been able to duplicate the warmed tomatoes as only the tomato slices were warm.
