Why I Love This Recipe
R made this during college in huge batches and would eat it all week long. It's flexible, adjust the relative amounts of beans, vegetables, broth and chicken to get the thickness and consistency you like. Thick it it great almost like a dip. Serve with tortilla chips, shredded cheese, sour cream and whatever taco condiments you like.
Ingredients You'll Need
Prepared roasted/rotisserie chicken
1 can rotel tomatoes
1 can red kidney beans
1 can corn
Directions
Put all canned ingredients in a large soup pot. Shred chicken, remove bones, skin, fat and add the meat to the pot. Heat and serve. Leftovrs keep well.
